Dawa & Tashi Sherpa, Owners

Dawa Sherpa grew up in the village of Mera in the lower Solukhumbu Valley of Nepal. At age 15 he began carrying loads as a porter for climbing and trekking expeditions to mountains such as Everest and Annapurna. In 1998 he moved to Boulder, Colorado and worked for Whole Foods in the frozen food department. In 2004 he and his brother and sister opened the Mt Everest Cafe here in Fort Collins. The award-winning cafe has garnered a large and dedicated following throughout Northern Colorado.

Tashi Sherpa is from the small village of Ringmo in the lower Solukhumbu Valley.  She and her family own a popular tea house and welcome scores of trekkers who are making the long hike from Jiri and Phaplu to Everest. In 2006 and 2007 she trained as a nurse midwife and moved to Israel for 5 years as a caregiver for an Alzheimers patient. Dawa and Tashi were married in March 2012.

Himalayan Bistro is a dream come true for Tashi and Dawa. They have created an elegant dining experience serving flavorful dishes using only the freshest and healthiest ingredients. The restaurant’s menu is an ever-present reminder of where they came from while they share their rich culture with their adopted home here in Colorado.
